Bread, Olive Oil and the Berber Kitchen — an Atlas Village Day
By mid-morning the Ourika valley still holds the cool of the river. Smoke rises from the communal oven at the edge of the village, where dough is already resting under a cloth. You press your palms into the round, flatten it the way you are shown, and slide it onto the hot stone. While it bakes, the women set out olives, mint, and a kettle that never quite stops. This is a slow day, made for families who would rather make lunch than be served it — grandparents, parents, and children all find a job here, and small hands are welcome at the table.
From the village you walk a short path between olive groves on the lower slopes. In autumn and winter you follow the harvest to the mill and watch the press turn fruit into green, peppery oil, still warm. Outside that season, the miller runs the stones for you and explains the year's rhythm, and the oil is poured from the last pressing. Either way, you taste it on bread you baked yourself.

The terrain is gentle — a village, a mill, and a short level walk — suited to mixed-age groups and unhurried mornings.
Olive pressing runs mainly in autumn and winter; outside the harvest we arrange a mill demonstration and last-pressing oil instead.
This is the Atlas near Ourika, where olives grow — not argan country, which is the south-west coast.
